KCARD Holiday Recipe Series: Cranberry Salad
“This is family favorite recipe that has been passed down from my grandmother. It’s now a holiday must have at family gatherings and is a super easy recipe to follow.” – Haleigh Young
Yield: 12 serving
Ingredients:
2-3 oz. jell-o boxes (cherry or cranberry)
2 cups hot water
½ cup cold water
1 cup sugar
1 cup pineapple syrup
1 cup fresh ground cranberries
1 cup grated orange
½ cup pecans
1 tbsp. lemon juice
1 cup crushed pineapples
Directions:
While water is boiling, prep other ingredients. Chop pecans into fine pieces, ground whole cranberries with a food processor, grate orange peel, and squeeze lemon.
Combine boiling water with jell-o mix and sugar in a large bowl. Wisk until dissolved.
Next combine all remaining ingredients and stir until evenly mixed.
Transfer mixture into a 9x13 baking dish, cover, and refrigerate overnight (or until firm).
