KCARD Staff Holiday Recipes: Kati's Ginger Sorghum Cookies

These are a fan favorite in my house every year and go like hot cakes. These cookies are perfectly spiced and full of flavor. They are perfect for cookie swaps or just to munch on while watching your favorite holiday movie. - Kati

Ginger Sorghum Cookies 

Ingredients: 

1 ½ cups Unsalted Butter, softened 

2 cups Granulated Sugar 

½ cup local Sorghum (or Molasses) 

4 cups All Purpose Flour 

4 tsp. Baking Soda 

2 tsp. Cinnamon 

1 tsp. Ground Cloves 

1 tsp. Ground Ginger 

1 tsp. Salt 

Directions: 

Preheat oven to 375 degrees Fahrenheit 

Whisk dry ingredients in separate bowl.  

Using a stand mixer with the paddle attachment or a hand mixer, beat butter and sugar until light and fluffy (on medium for about 1 minute).  

Add eggs and sorghum (or molasses) into butter mixture and beat on medium-low speed until combined.  

Gradually add dry ingredients and beat on low until combined. 

Roll dough into 1-inch balls and dip into granulated sugar.  

Bake for 8 to 10 minutes until set and firm around the edges.
