Pumpkin Roll:
Ingredients
3 eggs (beat until light & fluffy)
1 cup sugar
3⁄4 cup all purpose flour
1 teaspoon baking soda
2 teaspoons pumpkin spice
2⁄3 cup Libby’s 100% pure pumpkin
1 teaspoon lemon juice
Ingredients for Filling
1- 8 oz. Cream cheese at room temp
1 cup confectioners sugar
1 tsp vanilla
4 Tablespoons melted butter
Nuts (optional)
Preparation
1. Prepare cake roll by beating eggs well, gradually adding sugar and continue beating at high speed.
2. Sift together flour, soda, and pumpkin spice.
3. Stir into eggs along with pumpkin and lemon juice combined.
4. Pour batter into a well-greased and floured (10x15) pan.
5. Bake @ 350 for 10 minutes.
6. Immediately loosen the sides of pan and quickly turn out onto a linen towel sprinkled with confectioners’ sugar.
7. Sprinkle top of cake with confectioner sugar also. Roll up cake while hot, starting at wide end (towel and all).
8. Let cool while sitting on countertop.
9.Prepare filling by blending on low mixer speed, cream cheese, vanilla, and melted butter. Spread on cooled unrolled cake. Cover with thin layer of nuts if using
10. Reroll cake and cover with plastic wrap, then store in refrigerator.
